Description

A vibrant and colorful Taco Pasta Salad that combines the savory satisfaction of tacos with the ease of pasta, perfect for busy weeknight dinners or gatherings.


Ingredients

  • 8 ounces pasta (your favorite shape)
  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup crushed Doritos
  • 1/2 cup ranch dressing
  • 1/4 cup salsa
  • 1/4 cup sour cream


Instructions

  1. Cook the pasta according to package instructions, then drain and set aside to cool.
  2. Brown the ground beef in a skillet over medium heat until browned. Drain excess fat, then add the taco seasoning.
  3. Mix in a large bowl the cooked pasta, seasoned ground beef, cherry tomatoes, bell pepper, corn, and shredded cheese.
  4. Make the dressing by whisking together ranch dressing, salsa, and sour cream until smooth.
  5. Combine the dressing with the pasta salad mixture and toss to combine.
  6. Add the crushed Doritos just before serving for crunch.

Notes

For a vegetarian version, substitute meat with beans. Store leftovers in the fridge for up to 3 days.
