A vibrant and colorful Taco Pasta Salad that combines the savory satisfaction of tacos with the ease of pasta, perfect for busy weeknight dinners or gatherings.
Ingredients
- 8 ounces pasta (your favorite shape)
- 1 pound ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup crushed Doritos
- 1/2 cup ranch dressing
- 1/4 cup salsa
- 1/4 cup sour cream
Instructions
- Cook the pasta according to package instructions, then drain and set aside to cool.
- Brown the ground beef in a skillet over medium heat until browned. Drain excess fat, then add the taco seasoning.
- Mix in a large bowl the cooked pasta, seasoned ground beef, cherry tomatoes, bell pepper, corn, and shredded cheese.
- Make the dressing by whisking together ranch dressing, salsa, and sour cream until smooth.
- Combine the dressing with the pasta salad mixture and toss to combine.
- Add the crushed Doritos just before serving for crunch.
Notes
For a vegetarian version, substitute meat with beans. Store leftovers in the fridge for up to 3 days.
