Ingredients
- 8 oz pasta (fusilli or rotini)
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 can black beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 cup chopped iceberg lettuce (for garnish)
- 1/2 cup salsa
- 1/4 cup sour cream (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning and appropriate water (as instructed on the packet) to the beef, stirring until well combined. Cook for a few minutes to enhance the flavors.
- In a large bowl, combine the cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, cheese, red onion, and cilantro.
- Drizzle the salsa over the pasta salad and mix until everything is well incorporated.
- Season with salt and pepper to taste.
- Top with chopped iceberg lettuce if desired.
