Description

Taco Pasta Salad is a vibrant fusion of seasoned ground beef, colorful veggies, and zesty dressing mixed with pasta. Perfect for busy weeknights or gatherings.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 cup chopped iceberg lettuce (for garnish)
  • 1/2 cup salsa
  • 1/4 cup sour cream (optional)
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Add the taco seasoning and appropriate water (as instructed on the packet) to the beef, stirring until well combined. Cook for a few minutes to enhance the flavors.
  4. In a large bowl, combine the cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, cheese, red onion, and cilantro.
  5. Drizzle the salsa over the pasta salad and mix until everything is well incorporated.
  6. Season with salt and pepper to taste.
  7. Top with chopped iceberg lettuce if desired.
