Ingredients
- 1 lb ground beef (sub: ground turkey or chicken)
- 1 packet taco seasoning (or homemade blend)
- 1 cup water
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can diced tomatoes (14.5 oz) (use fire-roasted for extra depth)
- 1/2 cup sour cream (sub: plain Greek yogurt for a tangier, lighter option)
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- 1/2 cup milk (any milk works; whole milk is creamiest)
Instructions
- Brown the beef in a large skillet over medium-high heat until fully cooked.
- Drain excess fat and return the beef to the skillet.
- Season the beef with taco seasoning and water, simmering for about 5 minutes.
- Cook the elbow macaroni according to package instructions until al dente; drain and set aside.
- Start the base by heating olive oil in the same pot and adding diced tomatoes, stirring occasionally for 2–3 minutes.
- Combine the drained macaroni and seasoned beef mixture in the pot.
- Make it creamy by pouring in the milk; gradually add cheddar and mozzarella until melted.
- Finish with sour cream, stirring until smooth.
- Serve topped with chopped green onions.
