Description

A deliciously comforting breakfast dish made with sweet potatoes and oats, perfect for chilly mornings.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 2 cups almond milk (or any plant-based milk)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, mashed sweet potato, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt in a large bowl. Stir until well mixed.
  3. Pour the mixture into a greased 9×13-inch baking dish.
  4. Mix the chopped pecans with a splash of maple syrup in a separate bowl and sprinkle them over the oatmeal mixture.
  5. Bake for 30-35 minutes, or until the top is set and golden.
  6. Allow it to cool slightly before serving.

Notes

Serve with additional maple syrup, yogurt, or fresh fruit. Can be stored in the fridge for up to five days or frozen for up to three months.
