Description
A vibrant and refreshing pasta salad packed with colorful vegetables and savory flavors, perfect for summer gatherings.
Ingredients
- 1 lb. (16 oz.) rotini or your favorite pasta
- 1-2 cucumbers, diced
- 2 tomatoes, diced
- 2 stalks celery, chopped
- 2 bell peppers, chopped (any color you prefer)
- 1 bunch green onions, finely chopped
- 2 small cans sliced olives
- 1/2 cup pepperoni, sliced in half
- 1 cup cubed mozzarella or cheddar cheese
- 1/2 cup grated Parmesan cheese
- 12-16 oz. Italian dressing
- 2-3 Tbsp. Salad Supreme (optional but recommended)
Instructions
- Cut all the vegetables into bite-sized pieces.
- Cook the pasta according to the package directions. Once done, rinse it under cold water and drain well.
- In a large mixing bowl, combine the cooked pasta and chopped vegetables.
- Add the olives, pepperoni, cubed cheese, and grated Parmesan cheese.
- Pour in the Italian dressing and mix well to coat everything.
- Stir in the Salad Supreme seasoning and add salt and pepper to taste, if desired.
- Cover the bowl and refrigerate for at least 180 minutes before serving to allow the flavors to meld.
- Stir again before serving and enjoy your delicious creation!
Notes
Storage: Keep leftover pasta salad in an airtight container in the refrigerator and enjoy within 3-5 days.
