Description

A delightful dessert featuring layers of fluffy cake, fresh strawberries, and whipped cream, perfect for summer picnics and family gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry simple syrup
  • 2 cups fresh strawberries, sliced
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two or three 9-inch round cake pans.
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract until smooth.
  5. Whisk together the flour and baking powder in another bowl. Gradually add it to the wet mixture until just combined.
  6. Divide the batter evenly between the cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in their pans for about 10 minutes before transferring them to a wire rack to cool completely.
  9. Slice each cake layer in half horizontally if aiming for a 3-layer design.
  10. Assemble: Place one layer of cake on a serving platter. Brush with strawberry simple syrup, then top with sliced strawberries and a dollop of whipped cream.
  11. Repeat this layering process for the remaining cake layers.
  12. Frost the top and sides of the cake with whipped cream and adorn with extra strawberry slices. Chill for at least 30 minutes before serving.

Notes

This cake can be stored in an airtight container in the refrigerator for up to 2-3 days or frozen for up to a month.
