Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries (diced)
  • 2 tablespoons granulated sugar (for coating strawberries)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Toss the diced strawberries with 2 tablespoons of granulated sugar and let them sit.
  3. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  4. Add the cold, cubed butter into the flour mixture and blend until it resembles coarse crumbs.
  5. Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.
  6. Gradually mix the wet ingredients into the dry mixture, then fold in the sugared strawberries.
  7. Scoop 1.5 tablespoons of dough for each cookie onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 15-18 minutes until the edges are golden brown, then cool on a wire rack.
