Description

A delightful combination of strawberry shortcake and cheesecake, perfect for any occasion.

Ingredients

  • 2 cups strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Fresh strawberries for topping
  • 1 cup cookie crumbs (like graham cracker or digestive biscuits)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Combine the strawberry cake mix, water, vegetable oil, and eggs in a mixing bowl. Mix until smooth.
  3. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow it to cool completely.
  4. Beat the cream cheese and granulated sugar together until creamy. Stir in the vanilla extract.
  5. Whip the heavy cream and powdered sugar until stiff peaks form. Gently fold this into the cream cheese mixture.
  6. Layer the cooled cake with the cheesecake mixture in a serving dish.
  7. Top with cookie crumbs and fresh strawberries.
  8. Refrigerate for at least 2 hours before serving. Enjoy!

Notes

For a lighter flavor, substitute the strawberry cake mix with vanilla cake mix or use gluten-free options. Ensure the cream cheese is at room temperature for smooth mixing.
