Description

A delightful combination of fresh strawberries and rhubarb wrapped in a flaky, buttery pie crust, perfect for summer gatherings.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 tsp Salt
  • 6 tbsp Unsalted Butter (cold and cut into small cubes)
  • 1/2 cup Vegetable Shortening (cold and cut into cubes)
  • 4-6 tbsp Ice Cold Water
  • 3 cups Rhubarb (sliced in half and cut into small pieces)
  • 3 cups Strawberries (hulled and sliced into small pieces)
  • 1/2 cup Light Brown Sugar (lightly packed)
  • 1/2 cup Granulated Sugar
  • 1/4 cup Cornstarch
  • 2 tsp Vanilla Extract
  • 1 tbsp Lemon Juice
  • 3 tbsp Unsalted Butter (cut into small cubes)
  • 1 Large Egg White (to be brushed onto the pie crust for shine)


Instructions

  1. Make the Pie Crust: In a bowl, combine flour and salt. Add the cold butter and shortening, mixing with a pastry cutter or fingers until crumbly. Gradually add ice-cold water, one tablespoon at a time, until the dough holds together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a big bowl, combine the sliced rhubarb, strawberries, brown sugar, granulated sugar, cornstarch, vanilla extract, and lemon juice. Let it sit for about 15 minutes so the juices meld.
  3. Assemble the Pie: Preheat your oven to 425°F (220°C). Roll out half of the dough into a circle to fit your pie dish. Transfer it to the dish and pour the filling inside. Dot the top with small cubes of butter. Roll out a second piece of dough to cover the filling or create a lattice design. Brush the top with egg white for a shiny finish.
  4. Bake: Bake for 15 minutes in the preheated oven, then reduce the temperature to 350°F (175°C) and bake for an additional 45-55 minutes, until the filling is bubbly and the crust is golden.
  5. Cool and Serve: Allow the pie to cool for at least an hour before slicing to let the juices set.

Notes

Serve warm or at room temperature, possibly with vanilla ice cream or powdered sugar on top. For best results, keep all ingredients cold for a flaky crust.
