Description

A delightful combination of sweet strawberries and tart rhubarb topped with a crunchy crumble, perfect for celebrating spring.


Ingredients

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 cup flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup cold butter, cubed


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine strawberries, rhubarb, sugar, cornstarch, cinnamon, and lemon juice in a mixing bowl. Stir well and pour the mixture into a baking dish.
  3. Mix flour, oats, and brown sugar in a separate bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Sprinkle the crumble topping evenly over the fruit mixture.
  5. Bake for about 30-40 minutes, or until the topping is golden and the fruit is bubbling.
  6. Allow the crumble to cool slightly before serving.
