Description

Ingredients

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract in a bowl. Pour into a greased baking dish.
  3. Mix rolled oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly in another bowl.
  4. Sprinkle the oat mixture evenly over the fruit filling in the baking dish.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
  6. Let cool before serving to allow the filling to set.
