Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups fresh strawberries, sliced
- 1/3 cup sugar (for strawberries)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined—don’t overmix!
- Pour the batter evenly into the prepared pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Meanwhile, mix the sliced strawberries with 1/3 cup sugar. Set aside to allow them to release their juices.
- For the frosting, whip heavy cream, powdered sugar, and vanilla together until soft peaks form.
- Once cooled, place one layer of cake on a serving plate. Spread a layer of strawberries over it and top with whipped cream.
- Place the second cake layer on top and repeat the layering process.
- Frost the top and sides of the cake with the remaining whipped cream, decorating with whole strawberries on top.
- Chill in the fridge before serving for a refreshing treat. Enjoy!
