Description

A delightful dessert featuring layers of moist cake, fresh strawberries, and whipped cream, perfect for celebrations and summer gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, sliced
  • 1/3 cup sugar (for strawberries)
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined—don’t overmix!
  5. Pour the batter evenly into the prepared pans. Smooth the tops with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. Meanwhile, mix the sliced strawberries with 1/3 cup sugar. Set aside to allow them to release their juices.
  9. For the frosting, whip heavy cream, powdered sugar, and vanilla together until soft peaks form.
  10. Once cooled, place one layer of cake on a serving plate. Spread a layer of strawberries over it and top with whipped cream.
  11. Place the second cake layer on top and repeat the layering process.
  12. Frost the top and sides of the cake with the remaining whipped cream, decorating with whole strawberries on top.
  13. Chill in the fridge before serving for a refreshing treat. Enjoy!

Make it ahead: Bake the cake layers a day in advance. Whip the cream when ready to assemble. Fresh strawberries are key for the best flavor.
