Description

A delightful lemon loaf cake with a sweet yet tangy flavor, reminiscent of Starbucks’ version, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for icing)
  • 1 tablespoon lemon juice (for icing)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the lemon juice, lemon zest, and vanilla extract.
  5. Add the dry ingredients to the wet mixture gradually, stirring until just combined.
  6. Pour the batter into your prepared loaf pan, smoothing the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
  9. Mix the powdered sugar with the lemon juice for icing and drizzle over the cooled loaf.

Notes
