Ingredients
- 16 oz whole wheat spaghetti
- 48 oz spaghetti sauce
- 12 vegan meatballs
- 2 oz vegan cheese
- 1 oz sliced black olives
Instructions
- Preheat oven to 400°F (204°C) or according to the vegan meatball package instructions.
- Cook the spaghetti as per package instructions, drain, rinse with cold water, and set aside.
- Heat the spaghetti sauce in a pan over medium-low heat, stirring occasionally.
- Place the vegan meatballs on a parchment-lined baking sheet and bake according to package instructions.
- About 3 minutes before the meatballs are done, remove them from the oven. Place a small circle of vegan cheese on each meatball, then top with an olive slice. Return to the oven for 2-3 minutes, just until the cheese melts.
- Serve the spaghetti topped with sauce and the “eyeballs,” adding some crusty garlic bread on the side.
Notes
Cook the pasta ‘al dente’ to prevent it from falling apart when serving. Season store-bought sauce with extra seasonings for added flavor. Garnish with vegan Parmesan cheese.
