Description

Quick, easy, and fun spooky Halloween cookies with a fudge filling and candy eyes, perfect for any Halloween party.


Ingredients

  • 30 oatmeal cookies (raisins omitted)
  • 1 can (397g) condensed milk (dairy or non-dairy)
  • 1 cup (170g) chocolate chips
  • ¼ cup cocoa powder (Dutch processed)
  • 30 candy eyes


Instructions

  1. Prepare the Cookies: Start by using homemade or store-bought oatmeal cookies. If using homemade, skip the raisins.
  2. Make the Fudge Filling: In a microwave-safe bowl, combine the condensed milk and chocolate chips. Heat in 30-second intervals, stirring in between, until the mixture is smooth.
  3. Add Cocoa Powder: Sift in the cocoa powder and mix thoroughly until the fudge is rich and smooth. Let it cool to a piping consistency.
  4. Assemble the Cookies: Once the fudge is ready, pipe it onto the underside of one oatmeal cookie and then sandwich it with another.
  5. Decorate: Add candy eyes on top of the cookies for the perfect spooky touch.

Notes

If you don’t have piping bags, a plastic sandwich bag with the tip cut off works just as well. Store leftover cookies in an airtight container to keep them fresh for up to 3 days. Swap candy eyes for sprinkles or other Halloween decorations.
