Description

Ingredients

  • 8 oz spaghetti
  • 1 cup fresh spinach
  • 1/2 cup sundried tomatoes, chopped
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)


Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic, sautéing until fragrant, about 1 minute.
  4. Add the sundried tomatoes to the skillet and cook for an additional 2-3 minutes.
  5. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
  6. Toss in the fresh spinach, cooking until wilted, then season with salt and pepper to your preference.
  7. Combine the cooked spaghetti with the creamy sauce, tossing to ensure it’s well coated.
  8. Serve warm, optionally topped with grated Parmesan cheese.

Notes

For a lighter sauce, reduce the amount of cream or mix in chicken broth. Leftovers can be stored in an airtight container for up to 3 days.
