Ingredients
- 8 oz spaghetti
- 1 cup fresh spinach
- 1/2 cup sundried tomatoes, chopped
- 1 cup heavy cream
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic, sautéing until fragrant, about 1 minute.
- Add the sundried tomatoes to the skillet and cook for an additional 2-3 minutes.
- Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
- Toss in the fresh spinach, cooking until wilted, then season with salt and pepper to your preference.
- Combine the cooked spaghetti with the creamy sauce, tossing to ensure it’s well coated.
- Serve warm, optionally topped with grated Parmesan cheese.
Notes
For a lighter sauce, reduce the amount of cream or mix in chicken broth. Leftovers can be stored in an airtight container for up to 3 days.
