A vibrant grilled eggplant dish infused with spicy Jamaican jerk seasoning, perfect for summer barbecues or as a vegetarian main course.
Ingredients
- 2 medium eggplants
- 2 tablespoons jerk seasoning
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Lime wedges, for serving
- Fresh cilantro, for garnish
Instructions
- Preheat your grill to medium-high heat.
- Slice the eggplants into 1/2 inch thick rounds.
- Mix together the jerk seasoning, olive oil, salt, and pepper in a bowl.
- Brush the seasoned mixture onto both sides of each eggplant slice.
- Grill the eggplant slices for 4-5 minutes per side, or until they’re tender and slightly charred.
- Serve with lime wedges and a sprinkle of fresh cilantro.
Notes
For optimal flavor, salt the eggplant slices for 20 minutes before cooking. Consider marinating them in jerk seasoning for a few hours to deepen the flavor.
