Description

A vibrant grilled eggplant dish infused with spicy Jamaican jerk seasoning, perfect for summer barbecues or as a vegetarian main course.


Ingredients

  • 2 medium eggplants
  • 2 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lime wedges, for serving
  • Fresh cilantro, for garnish


Instructions

  1. Preheat your grill to medium-high heat.
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. Mix together the jerk seasoning, olive oil, salt, and pepper in a bowl.
  4. Brush the seasoned mixture onto both sides of each eggplant slice.
  5. Grill the eggplant slices for 4-5 minutes per side, or until they’re tender and slightly charred.
  6. Serve with lime wedges and a sprinkle of fresh cilantro.

Notes

For optimal flavor, salt the eggplant slices for 20 minutes before cooking. Consider marinating them in jerk seasoning for a few hours to deepen the flavor.
