Ingredients
- 6 large eggs, hard-boiled
- 3 tablespoons mayonnaise, room temperature
- 1 teaspoon Dijon mustard
- 1 teaspoon chili garlic sauce
- 1/2 teaspoon smoked paprika
- Salt, to taste
- Fresh chives, chopped, for garnish
- Red pepper flakes, for garnish
Instructions
- Start by placing the hard-boiled eggs in a pot filled with cold water.
- Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes.
- Drain the eggs and cool them in an ice water bath for 5 minutes before peeling.
- Slice each egg in half lengthwise and gently remove the yolks into a mixing bowl.
- Add mayonnaise, Dijon mustard, chili garlic sauce, smoked paprika, and salt to the yolks. Mash the mixture with a fork until smooth and creamy.
- Using a spoon or piping bag, fill the egg whites generously with the yolk mixture for an appealing presentation.
- Garnish with fresh chives and a sprinkle of red pepper flakes to amp up the heat.
