Ingredients

  • 6 large eggs, hard-boiled
  • 3 tablespoons mayonnaise, room temperature
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili garlic sauce
  • 1/2 teaspoon smoked paprika
  • Salt, to taste
  • Fresh chives, chopped, for garnish
  • Red pepper flakes, for garnish


Instructions

  1. Start by placing the hard-boiled eggs in a pot filled with cold water.
  2. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes.
  3. Drain the eggs and cool them in an ice water bath for 5 minutes before peeling.
  4. Slice each egg in half lengthwise and gently remove the yolks into a mixing bowl.
  5. Add mayonnaise, Dijon mustard, chili garlic sauce, smoked paprika, and salt to the yolks. Mash the mixture with a fork until smooth and creamy.
