Description

A flavorful and hearty dish that’s easy to prepare and perfect for any occasion.


Ingredients

  • 1 cup long-grain rice
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Sauté the onion and garlic in a large pot until softened.
  2. Add the rice and stir for a couple of minutes to enhance its flavor.
  3. Pour in the vegetable broth, diced tomatoes, black beans, cumin, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat, cover, and let it simmer for about 20 minutes until the rice is cooked and has absorbed all the liquid.
  5. Fluff the rice with a fork and garnish with chopped cilantro before serving.

Notes

For extra flavor, consider adding a bay leaf while simmering. Adjust seasoning as desired.
