Ingredients
- 1 cup long-grain rice
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups vegetable broth
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Sauté the onion and garlic in a large pot until softened.
- Add the rice and stir for a couple of minutes to enhance its flavor.
- Pour in the vegetable broth, diced tomatoes, black beans, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce heat, cover, and let it simmer for about 20 minutes until the rice is cooked and has absorbed all the liquid.
- Fluff the rice with a fork and garnish with chopped cilantro before serving.
Notes
For extra flavor, consider adding a bay leaf while simmering. Adjust seasoning as desired.
