A vibrant, hearty pasta salad that combines the flavors of the Southwest, perfect for summer gatherings or a quick weeknight dinner.
Ingredients
- 8 oz pasta (any shape)
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies, drained
- 1 cup bell peppers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and let it cool.
- Combine black beans, corn, diced tomatoes, bell peppers, red onion, and cilantro in a large bowl.
- Whisk together olive oil, lime juice, cumin, salt, and pepper in a small bowl.
- Add the cooled pasta to the vegetable mixture and drizzle the dressing over. Stir well to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Experiment with adding grilled chicken or shrimp for extra protein. Chill the salad for better flavor melding.
