Description

A vibrant, hearty pasta salad that combines the flavors of the Southwest, perfect for summer gatherings or a quick weeknight dinner.


Ingredients

  • 8 oz pasta (any shape)
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies, drained
  • 1 cup bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to the package instructions. Drain and let it cool.
  2. Combine black beans, corn, diced tomatoes, bell peppers, red onion, and cilantro in a large bowl.
  3. Whisk together olive oil, lime juice, cumin, salt, and pepper in a small bowl.
  4. Add the cooled pasta to the vegetable mixture and drizzle the dressing over. Stir well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Experiment with adding grilled chicken or shrimp for extra protein. Chill the salad for better flavor melding.
