Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for about 5-7 minutes until they start to soften.
- Stir in the chopped onion and red bell pepper, sautéing for another 3-4 minutes until the onions are translucent.
- Push the veggies to the side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spoon.
- Mix in the minced garlic, chili powder, cumin, salt, and pepper, incorporating everything together.
- Fold in the drained black beans and corn, stirring to combine. Cook for an additional 5 minutes until heated through.
- Garnish with fresh cilantro if desired, and serve warm.
Notes
For a vegetarian option, replace the beef with plant-based crumbles. Store leftovers in an airtight container for up to 3-4 days.
