Description

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 5-7 minutes until they start to soften.
  3. Stir in the chopped onion and red bell pepper, sautéing for another 3-4 minutes until the onions are translucent.
  4. Push the veggies to the side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spoon.
  5. Mix in the minced garlic, chili powder, cumin, salt, and pepper, incorporating everything together.
  6. Fold in the drained black beans and corn, stirring to combine. Cook for an additional 5 minutes until heated through.
  7. Garnish with fresh cilantro if desired, and serve warm.

Notes

For a vegetarian option, replace the beef with plant-based crumbles. Store leftovers in an airtight container for up to 3-4 days.
