Ingredients
- 1 whole chicken, cut into pieces
- 4 cups chicken broth
- 1 cup milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken pieces and chicken broth. Bring to a boil. Reduce the heat and simmer until the chicken is fully cooked. Remove the chicken and shred the meat.
- In the same pot, add the chopped onions, celery, and carrots to the broth. Cook until softened.
- In a mixing bowl, whisk together flour, baking powder, salt, and black pepper. Stir in the milk and melted butter until just combined.
- Drop spoonfuls of the dumpling batter into the simmering broth. Cover the pot and cook for about 15 minutes, or until the dumplings are fluffy and cooked through.
- Gently return the shredded chicken to the pot and stir to combine.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add herbs and spices like bay leaves or thyme during simmering. You can also use rotisserie chicken for convenience.
