  • 2 cups seasonal vegetables (e.g., spinach, squash, tomatoes, etc.)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, diced carrots, and diced celery. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add the broth and bring the mixture to a boil.
  5. Add the seasonal vegetables and dried thyme, then reduce heat and let simmer until the vegetables are tender, about 15-20 minutes.
  6. Season with salt and pepper to taste.
