Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 2 cups seasonal vegetables (e.g., spinach, squash, tomatoes, etc.)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, diced carrots, and diced celery. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the broth and bring the mixture to a boil.
- Add the seasonal vegetables and dried thyme, then reduce heat and let simmer until the vegetables are tender, about 15-20 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh herbs if desired and serve hot.
