Description

A flavorful dish featuring warm corn tortillas filled with succulent shrimp and a refreshing mango salsa.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 corn tortillas
  • 1 ripe mango, diced
  • ½ red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 avocado, sliced
  • ¼ cup heavy cream (or Greek yogurt for a lighter option)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the shrimp with minced garlic, salt, and pepper for about 4-5 minutes, until they turn pink and opaque.
  2. In a mixing bowl, combine the diced mango, red onion, cilantro, lime juice, and a pinch of salt to create the fresh mango salsa.
  3. For the creamy cilantro lime sauce, whisk together heavy cream, chopped cilantro, and lime juice in a separate bowl.
  4. Warm the corn tortillas in a dry skillet or microwave until pliable.
  5. Assemble your tacos by placing a few shrimp in each tortilla, topping them with mango salsa, and drizzling with the cilantro lime sauce.
  6. Serve immediately, garnished with slices of avocado if desired.

Notes

Use fresh shrimp for the best flavor, and feel free to substitute shrimp with grilled fish or tofu for different dietary needs.
