Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup pineapple, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1 jalapeño, minced (optional)
Instructions
- Preheat your grill to medium-high heat.
- Combine shrimp with olive oil, chili powder, cumin, salt, and pepper in a bowl.
- Grill shrimp for 2-3 minutes on each side, or until they turn pink and are cooked through.
- Mix grilled pineapple, red onion, cilantro, lime juice, and jalapeño in a bowl for the salsa.
- Warm the corn tortillas on the grill for about 30 seconds per side.
