Description
A classic shrimp scampi recipe made with butter, garlic, lemon, and white wine, ready in just 15 minutes.
Ingredients
- 2 tablespoons olive oil
- 4 tablespoons butter
- ½ medium onion, finely diced
- 4 garlic cloves, minced or pressed
- 1 pound large shrimp, peeled and deveined
- Juice of 2 lemons
- ½ cup dry white wine (sauvignon blanc or pinot grigio)
- Salt and freshly ground black pepper to taste
- 4 dashes hot sauce, plus more to taste
- 8 ounces angel hair pasta (or spaghetti, linguine, or fettuccine)
- ½ cup grated parmesan cheese
- Chopped fresh basil to taste
- Chopped fresh parsley to taste
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Heat the olive oil in a large skillet over medium heat and melt the butter into it.
- Add the finely diced onion and minced garlic. Cook until the onion becomes translucent and the garlic is fragrant, about 2 to 3 minutes.
- Add the shrimp to the skillet. Stir and cook for a couple of minutes until the shrimp just start to turn pink.
- Squeeze in the fresh lemon juice from two lemons and pour in the white wine. Season with salt, pepper, and hot sauce. Stir and reduce the heat to low.
- Drop the angel hair pasta into the boiling water and cook until just done or al dente, about 2 to 3 minutes.
- Before draining, reserve 1 to 2 cups of the starchy pasta water.
- Drain the pasta and remove the skillet from the heat.
- Add the cooked pasta to the skillet with the shrimp and toss together, adding reserved pasta water as needed.
- Top with grated parmesan cheese and generous amounts of chopped fresh basil and parsley.
- Serve immediately while hot.
Notes
Use fresh lemon juice for the best results. You can also add crushed red pepper for added spice.
