Ingredients
- 4 boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3/4 cup chicken broth
Instructions
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts in a single layer and season with salt and pepper.
- Cook undisturbed for 5 minutes until golden, then flip the chicken over.
- Pour the chicken broth into the pan around the chicken and cover with a lid.
- Cook for 7-10 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove the chicken and shred using two forks or a stand mixer on speed 2 for 15 seconds.
- Mix in some of the pan liquid for added moisture and flavor.

Store in an airtight container for 3-4 days in the fridge or freeze for up to 2 months.
