Description

Creamy and cheesy scalloped potatoes baked to perfection, perfect for family dinners and holiday gatherings.


Ingredients

  • 4 cups potatoes (thinly sliced)
  • 3 tablespoons butter (for the cheese sauce)
  • 1 1/2 cups milk
  • 3 tablespoons all-purpose flour (for the roux)
  • 1 1/2 cups sharp cheddar cheese (grated, for the sauce)
  • 1/2 cup extra cheese (cheddar or Gruyère, grated, for topping)
  • Salt (to taste)
  • 1/2 cup green onions (optional, sliced for garnish)
  • A pinch of cayenne pepper (optional, for added heat)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or non-stick spray.
  3. In a medium saucepan, melt 3 tablespoons of butter over medium heat.
  4. Whisk in 3 tablespoons of flour to create a roux and cook for 1-2 minutes until golden.
  5. Gradually add 1 1/2 cups of milk, whisking constantly to eliminate lumps.
  6. Simmer for 5-7 minutes until thickened. Remove from heat and stir in 1 1/2 cups of grated sharp cheddar cheese until melted and smooth. Season with salt and a pinch of cayenne if desired.
  7. Layer half of the sliced potatoes in the prepared baking dish, slightly overlapping them.
  8. Pour half of the cheese sauce over the potatoes, spreading it evenly.
  9. Repeat the layering with the remaining potatoes and cheese sauce.
  10. Sprinkle 1/2 cup of extra grated cheese on top.
  11. Cover the dish with foil and bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
  12. Remove from the oven and allow the dish to rest for 10-15 minutes before serving. Garnish with sliced green onions if desired.

Notes

Use a mandoline slicer for uniform potato slices. Feel free to customize with different cheeses or add cooked bacon and herbs.
