A seafood delight featuring tender sautéed cod in a vibrant tomato basil white wine sauce, perfect for busy weeknights.
Ingredients
- 4 cod fillets
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/2 cup white wine (pinot grigio)
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the cod fillets with salt and pepper, then add them to the skillet. Cook for 3-4 minutes on each side until golden and cooked through. Remove the cod from the skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add cherry tomatoes and white wine, cooking until the tomatoes are softened, about 5 minutes.
- Stir in chopped basil and return the cod to the skillet, spooning the sauce over the fish.
- Allow it to cook for an additional 2 minutes to warm through.
- Serve immediately, possibly with extra basil as a garnish.
Notes
For variations, consider using haddock or tilapia. Fresh ingredients enhance the flavor, and don’t overcook the cod.
