Description

A seafood delight featuring tender sautéed cod in a vibrant tomato basil white wine sauce, perfect for busy weeknights.


Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/2 cup white wine (pinot grigio)
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the cod fillets with salt and pepper, then add them to the skillet. Cook for 3-4 minutes on each side until golden and cooked through. Remove the cod from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant.
  4. Add cherry tomatoes and white wine, cooking until the tomatoes are softened, about 5 minutes.
  5. Stir in chopped basil and return the cod to the skillet, spooning the sauce over the fish.
  6. Allow it to cook for an additional 2 minutes to warm through.
  7. Serve immediately, possibly with extra basil as a garnish.

Notes

For variations, consider using haddock or tilapia. Fresh ingredients enhance the flavor, and don’t overcook the cod.
