Description

A hearty breakfast casserole that combines crispy hash browns, savory sausage, fluffy eggs, and melted cheddar cheese, perfect for make-ahead meals.


Ingredients

  • 2 pounds hot breakfast sausage
  • 1 (30-32 ounce) bag frozen shredded hash browns
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder


Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch baking dish with cooking spray.
  2. In a skillet, cook the breakfast sausage over medium-high heat until fully cooked, about 8-10 minutes. Drain the excess fat and set aside.
  3. In the same skillet, add frozen hash browns and cook until lightly browned and starting to crisp, about 5-7 minutes.
  4. Layer the browned hash browns in the bottom of the baking dish.
  5. Spread the cooked sausage over the hash browns and sprinkle shredded cheddar cheese on top.
  6. In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  7. Pour the egg mixture evenly over the layers in the baking dish.
  8. Cover tightly with plastic wrap or aluminum foil and refrigerate overnight or bake immediately.
  9. Bake uncovered for 35-40 minutes until the eggs are set and the top is golden brown.
  10. Let the casserole rest for 5-10 minutes before serving.

Notes

This casserole can be made a day ahead and refrigerated. For lighter options, swap hot sausage with turkey sausage.
