Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon chipotle powder
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Combine olive oil, chipotle powder, salt, and pepper in a small bowl. Rub this mixture evenly over the salmon fillets.
- Place the seasoned salmon on a foil-lined baking sheet.
- Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and flakes easily.
- Mix diced mango, red onion, jalapeño, lime juice, and cilantro in a bowl to create the salsa.
- Serve the baked salmon hot, topped with the fresh mango salsa.
Notes
For added flavor, marinate the salmon for up to 30 minutes before cooking. Adjust jalapeño for less heat if desired.
