Ingredients
- 2 cups rotisserie chicken, shredded
- 1 can refried beans
- 2 cups shredded cheese (cheddar or a cheese blend)
- 8 small flour tortillas
- Sour cream (for serving)
- Salsa (for serving)
- Olive oil or butter (for cooking)
Instructions
- Heat a skillet over medium heat. Brush one side of a tortilla with olive oil or butter.
- Place the tortilla in the skillet, oiled side down.
- Spread a layer of refried beans on one half of the tortilla, followed by shredded chicken and cheese.
- Fold the tortilla over to enclose the filling.
- Cook for about 3-4 minutes per side, until the cheese melts and the tortilla turns golden brown.
- Remove from heat and slice into wedges.
- Serve warm with sour cream and salsa on the side.
Notes
For extra crispiness, use a cast-iron skillet. Experiment with different cheeses and veggies.
