Description

Creamy, cheesy quesadillas filled with tender rotisserie chicken, perfect for quick dinners or movie nights.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 can refried beans
  • 2 cups shredded cheese (cheddar or a cheese blend)
  • 8 small flour tortillas
  • Sour cream (for serving)
  • Salsa (for serving)
  • Olive oil or butter (for cooking)


Instructions

  1. Heat a skillet over medium heat. Brush one side of a tortilla with olive oil or butter.
  2. Place the tortilla in the skillet, oiled side down.
  3. Spread a layer of refried beans on one half of the tortilla, followed by shredded chicken and cheese.
  4. Fold the tortilla over to enclose the filling.
  5. Cook for about 3-4 minutes per side, until the cheese melts and the tortilla turns golden brown.
  6. Remove from heat and slice into wedges.
  7. Serve warm with sour cream and salsa on the side.

Notes

For extra crispiness, use a cast-iron skillet. Experiment with different cheeses and veggies.
