Delicious and comforting enchiladas made with shredded rotisserie chicken, enchilada sauce, and cheese, perfect for family dinners.
Ingredients
- 2 cups shredded rotisserie chicken
- 1 cup red enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- 1 small onion, diced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the shredded chicken, diced onion, ground cumin, and season with salt and pepper in a large bowl.
- Spread a thin layer of red enchilada sauce in the bottom of a baking dish.
- Take a tortilla and fill it with the chicken mixture, rolling it tightly and placing it seam-side down in the dish.
- Repeat until all filling is used up. Pour the remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbling.
- If desired, garnish with fresh cilantro before serving hot.
Notes
Feel free to swap flour tortillas for corn tortillas or use a dairy-free cheese variant if dietary needs call for it.
