Description

Delicious and comforting enchiladas made with shredded rotisserie chicken, enchilada sauce, and cheese, perfect for family dinners.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup red enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1 small onion, diced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the shredded chicken, diced onion, ground cumin, and season with salt and pepper in a large bowl.
  3. Spread a thin layer of red enchilada sauce in the bottom of a baking dish.
  4. Take a tortilla and fill it with the chicken mixture, rolling it tightly and placing it seam-side down in the dish.
  5. Repeat until all filling is used up. Pour the remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbling.
  7. If desired, garnish with fresh cilantro before serving hot.

Notes

Feel free to swap flour tortillas for corn tortillas or use a dairy-free cheese variant if dietary needs call for it.
