A quick and easy pasta dish combining tender rotisserie chicken with a fragrant garlic butter sauce, perfect for busy weeknights.


Ingredients

  • 16 ounces penne pasta (or any shape you prefer)
  • 2-3 cups rotisserie chicken, shredded or chopped (about half a rotisserie chicken)
  • ½ cup extra-virgin olive oil
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon salt (reduce by half if using salted butter)
  • ¼ teaspoon red pepper flakes (or ground black pepper)
  • 2 tablespoons Italian seasoning (or ¼ cup fresh herbs like parsley, thyme, or basil)
  • ⅓ cup Parmesan cheese, grated


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the penne and cook according to package directions. In the last 2 minutes of cooking, add the chopped rotisserie chicken to warm through.
  2. Drain the pasta and chicken together, then return to the pot.
  3. In a small saucepan, heat olive oil, butter, minced garlic, salt, and red pepper flakes over medium-high heat, stirring for about 2 minutes until the garlic is golden and fragrant. If using dried Italian seasoning, add it now.
  4. Pour the garlic sauce over the drained pasta and chicken, add Parmesan cheese and any fresh herbs, and toss to combine. Adjust seasoning to taste.
  5. Serve warm, garnished with extra Parmesan and parsley.

Notes

For added nutrition, consider mixing steamed vegetables into the pasta. This dish can be made ahead or stored for several days.
