Description

Simple, beautiful, and buttery cookies with an aromatic rosemary twist — just perfect for holiday trays!


Ingredients

  • ½ cup softened butter
  • ¼ cup granulated sugar
  • 2½ tsp finely minced fresh rosemary
  • Zest of 1 lemon
  • 1¼ cups all-purpose flour
  • 12 tbsp coarse sugar for topping


Instructions

  1. Heat oven to 300°F (150°C).
  2. Cream butter, sugar, rosemary, and lemon zest until fluffy.
  3. Mix in flour; if it looks sandy, keep mixing until it forms clumps.
  4. Press dough into an ungreased 8″ baking dish. Sprinkle coarse sugar on top.
  5. Bake for 35 min (should not brown too much).
  6. Cool for 10–15 min, slice into shapes while still warm, and cool completely before storing.

Notes

Use unsalted butter and a tiny pinch of salt for best flavor. Enjoy warm or store in an airtight container; they freeze well. Add thyme or sage for extra herb notes.
