Simple, beautiful, and buttery cookies with an aromatic rosemary twist — just perfect for holiday trays!
Ingredients
- ½ cup softened butter
- ¼ cup granulated sugar
- 2½ tsp finely minced fresh rosemary
- Zest of 1 lemon
- 1¼ cups all-purpose flour
- 1–2 tbsp coarse sugar for topping
Instructions
- Heat oven to 300°F (150°C).
- Cream butter, sugar, rosemary, and lemon zest until fluffy.
- Mix in flour; if it looks sandy, keep mixing until it forms clumps.
- Press dough into an ungreased 8″ baking dish. Sprinkle coarse sugar on top.
- Bake for 35 min (should not brown too much).
- Cool for 10–15 min, slice into shapes while still warm, and cool completely before storing.
Notes
Use unsalted butter and a tiny pinch of salt for best flavor. Enjoy warm or store in an airtight container; they freeze well. Add thyme or sage for extra herb notes.
