Irresistibly delicious bites combining creamy chocolate, chewy caramel, and crunchy Nilla Wafers. Perfect for any gathering or a cozy night in.
Ingredients
- 1 (11 oz) box Mini Nilla Wafers
- 1 (8 oz) bag Rolos
- 2 cups chocolate chips
- 2 tbsp vegetable oil
Instructions
- Preheat your oven to 300 degrees F (150 degrees C) and line a baking sheet with parchment paper or a silicone mat.
- Place half the Nilla Wafers on your baking pan, flat side facing up, and top each with a Rolo.
- Bake in the preheated oven for 90 seconds to soften the Rolos. Remove them promptly and skillfully sandwich another Nilla Wafer on top of each Rolo.
- Transfer the baking sheet of Rolo sandwich cookies to the fridge for about 10 minutes to let the Rolos firm back up.
- Combine chocolate chips and vegetable oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Working one at a time, dip each Rolo sandwich cookie into the melted chocolate, allowing the excess chocolate to drip off. Return to the lined baking sheet.
- Place the baking sheet into the fridge to set the chocolate coating, and enjoy these delectable bites!
