Description
A simple yet flavorful side dish of roasted asparagus topped with zesty parmesan, perfect for any meal.
Ingredients
- 1 pound fresh asparagus
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons grated parmesan cheese
- The juice of 1 lemon (about 1 tablespoon)
- Red pepper flakes (optional for serving)
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Rinse the asparagus under cool water and pat them dry with paper towels. Trim off the tough ends—about an inch from the bottom works well.
- Arrange the asparagus in a single layer on your prepared baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to ensure each piece is coated evenly. Add the grated parmesan on top of the spears.
- Bake in the preheated oven for approximately 10 minutes, or until the asparagus is fork-tender.
- Remove from the oven, finish with a squeeze of fresh lemon juice, and add a sprinkle of red pepper flakes if desired. Enjoy!
Notes
For a vegan twist, substitute parmesan cheese with nutritional yeast. Best enjoyed fresh, but leftovers can be stored in the refrigerator for up to three days.
