Description

Delicious roasted carrots drizzled with a sweet and tangy honey balsamic glaze, perfect for any occasion.


Ingredients

  • 2 lbs carrots
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp honey
  • 1/4 cup balsamic vinegar
  • 1 Tbsp butter


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then cut them into one-inch pieces.
  3. On a parchment-lined baking sheet, place the carrots and drizzle with olive oil. Sprinkle with salt and pepper, tossing until coated evenly.
  4. Roast the carrots for approximately 30 minutes, stirring once halfway through for even cooking.
  5. Meanwhile, prepare the glaze: Combine the honey and balsamic vinegar in a small saucepan. Simmer over medium-low heat for about 10 minutes until it thickens slightly.
  6. Remove from heat and stir in the butter until melted. Set aside.
  7. Once the carrots are done, drizzle the honey balsamic glaze over them and toss gently to coat.
  8. Serve warm, and enjoy the vibrant flavors!

Notes

You can substitute honey with maple syrup for a vegan version. Store leftovers in an airtight container in the fridge for 3-4 days.
