Description
Delicious roasted carrots drizzled with a sweet and tangy honey balsamic glaze, perfect for any occasion.
Ingredients
- 2 lbs carrots
- 1 Tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp honey
- 1/4 cup balsamic vinegar
- 1 Tbsp butter
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then cut them into one-inch pieces.
- On a parchment-lined baking sheet, place the carrots and drizzle with olive oil. Sprinkle with salt and pepper, tossing until coated evenly.
- Roast the carrots for approximately 30 minutes, stirring once halfway through for even cooking.
- Meanwhile, prepare the glaze: Combine the honey and balsamic vinegar in a small saucepan. Simmer over medium-low heat for about 10 minutes until it thickens slightly.
- Remove from heat and stir in the butter until melted. Set aside.
- Once the carrots are done, drizzle the honey balsamic glaze over them and toss gently to coat.
- Serve warm, and enjoy the vibrant flavors!
Notes
You can substitute honey with maple syrup for a vegan version. Store leftovers in an airtight container in the fridge for 3-4 days.
