Description
A simple yet elegant side dish of roasted asparagus enhanced with melted Parmesan cheese.
Ingredients
- 1 pound fresh asparagus
- 2 tablespoons extra virgin olive oil
- ½ cup freshly grated Parmesan cheese
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 lemon (cut into wedges for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- Snap off the woody ends of the asparagus spears.
- Spread the asparagus onto a large, rimmed baking sheet.
- Drizzle the olive oil over the spears, then sprinkle with salt and pepper.
- Toss the spears to coat them evenly.
- Arrange the asparagus in a single layer, making sure they don’t overlap.
- Roast in the oven for about 10-12 minutes until the tips are lightly charred and the stalks are tender-crisp.
- Once out of the oven, immediately sprinkle grated Parmesan over the hot asparagus.
- Transfer to a serving platter and enjoy right away with lemon wedges.
Notes
Feel free to substitute the Parmesan with a dairy-free cheese or nutritional yeast for a vegan version. Reserve extra Parmesan for serving.
