Description

A simple yet elegant side dish of roasted asparagus enhanced with melted Parmesan cheese.


Ingredients

  • 1 pound fresh asparagus
  • 2 tablespoons extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 lemon (cut into wedges for serving)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Snap off the woody ends of the asparagus spears.
  3. Spread the asparagus onto a large, rimmed baking sheet.
  4. Drizzle the olive oil over the spears, then sprinkle with salt and pepper.
  5. Toss the spears to coat them evenly.
  6. Arrange the asparagus in a single layer, making sure they don’t overlap.
  7. Roast in the oven for about 10-12 minutes until the tips are lightly charred and the stalks are tender-crisp.
  8. Once out of the oven, immediately sprinkle grated Parmesan over the hot asparagus.
  9. Transfer to a serving platter and enjoy right away with lemon wedges.

Notes

Feel free to substitute the Parmesan with a dairy-free cheese or nutritional yeast for a vegan version. Reserve extra Parmesan for serving.
