Description

A simple yet elegant roasted asparagus dish infused with garlic and lemon that brightens any meal.


Ingredients

  • 1 lb fresh asparagus, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • Zest of 1 lemon
  • 1 tbsp fresh lemon juice
  • Optional: grated Parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the trimmed asparagus in a single layer on the prepared baking sheet.
  3. Drizzle with olive oil and sprinkle the minced garlic, salt, and black pepper over the asparagus. Toss to coat evenly.
  4. Roast for 12–15 minutes until the asparagus is tender and lightly crisp on the edges.
  5. Remove from the oven and immediately add the lemon zest and lemon juice. Toss gently to combine.
  6. If desired, finish with a sprinkle of grated Parmesan cheese for an extra layer of flavor. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, blanch in boiling water for 2 minutes before transferring to ice water.
