Description
A simple yet elegant roasted asparagus dish infused with garlic and lemon that brightens any meal.
Ingredients
- 1 lb fresh asparagus, trimmed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- Zest of 1 lemon
- 1 tbsp fresh lemon juice
- Optional: grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Spread the trimmed asparagus in a single layer on the prepared baking sheet.
- Drizzle with olive oil and sprinkle the minced garlic, salt, and black pepper over the asparagus. Toss to coat evenly.
- Roast for 12–15 minutes until the asparagus is tender and lightly crisp on the edges.
- Remove from the oven and immediately add the lemon zest and lemon juice. Toss gently to combine.
- If desired, finish with a sprinkle of grated Parmesan cheese for an extra layer of flavor. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, blanch in boiling water for 2 minutes before transferring to ice water.
