A vibrant and refreshing roasted vegetable dish featuring tender asparagus topped with crispy Parmesan and zesty lemon.
Ingredients
- 500 g asparagus, trimmed
- 2 tbsp extra virgin olive oil
- 50 g grated Parmesan cheese
- 1 lemon (zest + wedges)
- 1 garlic clove, minced
- Salt to taste
- Freshly ground black pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Preheat your oven to 220°C (425°F).
- Arrange the trimmed asparagus on a baking sheet in a single layer.
- In a small bowl, combine the olive oil, minced garlic, a pinch of salt, and a few grinds of black pepper.
- Drizzle this mixture over the asparagus, tossing to coat every piece well.
- Roast in the preheated oven for 10–12 minutes, or until the asparagus is tender and slightly charred.
- Remove the tray from the oven and sprinkle the grated Parmesan evenly over the hot asparagus.
- Place back in the oven for an additional 1–2 minutes, just until the cheese melts and turns a bit golden.
- Zest the lemon over the asparagus and squeeze a bit of juice to taste. Add red pepper flakes if desired.
- Serve hot, with lemon wedges on the side for extra zing.
Notes
Choose asparagus with firm, bright green stalks for the best flavor and texture. For added depth, marinate the asparagus in the olive oil mixture for 30 minutes before roasting.
