Description

A delightful side dish featuring roasted asparagus and carrots that showcases their natural sweetness.


Ingredients

  • 1 bunch of asparagus, woody ends trimmed
  • 4 large carrots, peeled and sliced into sticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper or aluminum foil.
  3. Place the trimmed asparagus and carrot sticks on the prepared baking sheet.
  4. Drizzle olive oil over the vegetables.
  5. Sprinkle with minced garlic, dried thyme, salt, and pepper. Toss until evenly coated.
  6. Spread the vegetables in a single layer on the baking sheet.
  7. Roast in the preheated oven for 20-25 minutes, tossing halfway through until tender and lightly browned.
  8. Transfer the roasted vegetables to a serving platter.
  9. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Add a splash of balsamic vinegar for extra flavor or swap the carrots for bell peppers.
