Ingredients
- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 1/2 cup milk
- 3 large eggs
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Combine the wet ingredients in one bowl.
- Mix the dry ingredients in another bowl.
- Blend the two mixtures together.
- Cook to fluffy perfection.
- In a mixing bowl, whisk together the ricotta cheese, milk, and eggs until smoothly combined.
- In another bowl, mix the flour, sugar, baking powder, and salt until well blended.
- Gradually add the dry ingredients to the ricotta mixture and stir until just combined; do not over-mix.
- Fold in the vanilla extract gently to retain the light texture.
- Heat a skillet over medium heat and coat with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface.
- Flip the pancakes and cook until golden brown on both sides.
- Serve warm with maple syrup, fruit, or your favorite toppings.
Notes
For a lower-fat option, substitute ricotta with cottage cheese.
