Description

Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 3 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking


Instructions

  1. Combine the wet ingredients in one bowl.
  2. Mix the dry ingredients in another bowl.
  3. Blend the two mixtures together.
  4. Cook to fluffy perfection.
  5. In a mixing bowl, whisk together the ricotta cheese, milk, and eggs until smoothly combined.
  6. In another bowl, mix the flour, sugar, baking powder, and salt until well blended.
  7. Gradually add the dry ingredients to the ricotta mixture and stir until just combined; do not over-mix.
  8. Fold in the vanilla extract gently to retain the light texture.
  9. Heat a skillet over medium heat and coat with butter or oil.
  10. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface.
  11. Flip the pancakes and cook until golden brown on both sides.
  12. Serve warm with maple syrup, fruit, or your favorite toppings.

Notes

For a lower-fat option, substitute ricotta with cottage cheese.
