Description

A delightful Raspberry Tart featuring rich chocolate ganache and fresh raspberries, perfect for any occasion.


Ingredients

  • 200g all-purpose flour
  • 100g unsalted butter, chilled and cubed
  • 50g powdered sugar
  • 1 large egg yolk
  • 300g fresh raspberries
  • 200g heavy cream
  • 100g dark chocolate, chopped
  • 50g granulated sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine flour, chilled butter, and powdered sugar. Mix until the mixture resembles coarse crumbs.
  3. Incorporate the egg yolk, stirring until a smooth dough forms.
  4. Press the dough evenly into a tart pan, ensuring it covers the sides. Bake for 15-20 minutes until golden brown.
  5. Meanwhile, prepare the ganache by heating the heavy cream in a saucepan over medium heat until just simmering.
  6. Pour the hot cream over the chopped dark chocolate. Stir until silky smooth.
  7. Add granulated sugar and vanilla extract to the mixture, stirring until fully blended.
  8. Spread the chocolate ganache evenly into the cooled tart shell.
  9. Gently arrange the fresh raspberries on top and refrigerate for at least 1 hour before serving.

Notes

Dust with powdered sugar and garnish with mint for presentation. Pair with ice cream for an indulgent treat.
