A delicious homemade raspberry pie that’s sweet, tart, and perfect for any occasion.
Ingredients
- 2 cups fresh raspberries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 pie crust (homemade or store-bought)
- 1 tablespoon butter (for dotting)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- Combine raspberries, sugar, cornstarch, and lemon juice in a mixing bowl. Stir gently until mixed.
- Roll out your pie crust and fit it into a pie dish.
- Pour the raspberry mixture into the prepared crust and dot the filling with small pieces of butter.
- Roll out a second pie crust to cover the pie or make a lovely lattice top.
- Seal the edges and cut slits in the crust if using a full cover.
- Brush the top with an egg wash made from the beaten egg and milk.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden and the filling is bubbly. Let it cool before serving.
Notes
Serve with vanilla ice cream, warm chocolate sauce, or fresh mint for extra flavor.
