Description
A refreshing homemade popsicle recipe combining tart raspberries and sweet peaches, perfect for summer days.
Ingredients
- 1 1/2 cups peaches, diced
- 1/2 banana
- 1/2 – 3/4 cup orange juice
- 1/8 – 1/4 tsp vanilla extract
- 1 Tbsp honey or agave (as needed)
- 2 cups raspberries, cleaned
- 2-3 Tbsp honey or agave (or, to taste)
- Juice of 1/2 lemon
- 1/2 cup water
Instructions
- In a blender, combine the peaches, banana, honey/agave, orange juice, and 1/8 teaspoon vanilla extract. Blend until completely smooth. Set aside.
- Next, add the raspberries, lemon juice, honey/agave, and water to the blender. Blend until smooth.
- Pour the raspberry purée through a fine-mesh sieve to remove seeds.
- Begin layering the raspberry and peach mixtures in popsicle molds.
- Carefully insert popsicle sticks, cover the molds, and freeze for at least 4-5 hours.
- To release the popsicles, run the molds under cold water and gently wiggle the sticks.
Notes
These popsicles can be made with frozen fruit if fresh isn’t available.
