Description

A refreshing homemade popsicle recipe combining tart raspberries and sweet peaches, perfect for summer days.


Ingredients

  • 1 1/2 cups peaches, diced
  • 1/2 banana
  • 1/2 – 3/4 cup orange juice
  • 1/8 – 1/4 tsp vanilla extract
  • 1 Tbsp honey or agave (as needed)
  • 2 cups raspberries, cleaned
  • 2-3 Tbsp honey or agave (or, to taste)
  • Juice of 1/2 lemon
  • 1/2 cup water


Instructions

  1. In a blender, combine the peaches, banana, honey/agave, orange juice, and 1/8 teaspoon vanilla extract. Blend until completely smooth. Set aside.
  2. Next, add the raspberries, lemon juice, honey/agave, and water to the blender. Blend until smooth.
  3. Pour the raspberry purée through a fine-mesh sieve to remove seeds.
  4. Begin layering the raspberry and peach mixtures in popsicle molds.
  5. Carefully insert popsicle sticks, cover the molds, and freeze for at least 4-5 hours.
  6. To release the popsicles, run the molds under cold water and gently wiggle the sticks.

Notes

These popsicles can be made with frozen fruit if fresh isn’t available.
