Description

A vibrant and tart raspberry filling perfect for cakes, pastries, and cupcakes.


Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/4 cup water


Instructions

  1. In a small saucepan, combine the raspberries, sugar, and lemon juice.
  2. Place the saucepan over medium heat and cook for about 5 minutes until raspberries break down.
  3. In a separate bowl, mix cornstarch with water until smooth.
  4. Slowly add the cornstarch mixture to the saucepan, stirring continuously.
  5. Cook for an additional 2-3 minutes until the mixture thickens.
  6. Remove from heat and let cool before using as a filling for any baked goods.
