Description

Brighten up your summer with these colorful and healthy rainbow popsicles made from blended fruits and coconut water or fruit juice.


Ingredients

  • Assorted fresh or frozen fruits (like strawberries, blueberries, mangoes, and kiwi)
  • Coconut water or your favorite fruit juice
  • Honey or agave syrup (optional)


Instructions

  1. Blend each type of fruit separately to create colorful purees.
  2. Layer the fruit purees in a popsicle mold, starting from the bottom to achieve the rainbow effect.
  3. Pour coconut water or fruit juice into the molds to fill them.
  4. Add honey or agave syrup to your purees if you prefer sweetness.
  5. Insert sticks and freeze for at least 240-360 minutes or until completely solid.
  6. Run warm water over the outside of the mold for a few seconds to loosen the popsicles when ready to serve.

Notes

For distinct colors, let each layer freeze for about an hour before adding the next.
