Brighten up your summer with these colorful and healthy rainbow popsicles made from blended fruits and coconut water or fruit juice.
Ingredients
- Assorted fresh or frozen fruits (like strawberries, blueberries, mangoes, and kiwi)
- Coconut water or your favorite fruit juice
- Honey or agave syrup (optional)
Instructions
- Blend each type of fruit separately to create colorful purees.
- Layer the fruit purees in a popsicle mold, starting from the bottom to achieve the rainbow effect.
- Pour coconut water or fruit juice into the molds to fill them.
- Add honey or agave syrup to your purees if you prefer sweetness.
- Insert sticks and freeze for at least 240-360 minutes or until completely solid.
- Run warm water over the outside of the mold for a few seconds to loosen the popsicles when ready to serve.
Notes
For distinct colors, let each layer freeze for about an hour before adding the next.
