Description

A colorful and refreshing treat made from pureed fruits and creamy coconut milk, perfect for hot summer days.


Ingredients

  • 1 cup strawberries, hulled and chopped
  • 1 cup orange juice
  • 1 cup mango, chopped
  • 1 cup kiwi, chopped
  • 1 cup blueberries
  • 1 cup coconut milk
  • Sweetener to taste (optional)


Instructions

  1. In a blender, puree the strawberries until smooth. Pour the puree into popsicle molds, filling them about 1/4 full. Freeze for 1 hour.
  2. Pour the orange juice into the molds over the frozen strawberry layer and freeze for another hour.
  3. Next, layer in the mango puree and freeze for another hour.
  4. Follow with the kiwi puree, freeze, and then add the blueberries.
  5. Finish off by pouring a layer of coconut milk on top and freeze until solid.
  6. To remove the popsicles, run warm water over the outside of the molds for a few seconds.

Notes

Experiment with your favorite fruits or add herbs for unique flavors. Store in an airtight container for up to two months.
