Description
A colorful and refreshing treat made from pureed fruits and creamy coconut milk, perfect for hot summer days.
Ingredients
- 1 cup strawberries, hulled and chopped
- 1 cup orange juice
- 1 cup mango, chopped
- 1 cup kiwi, chopped
- 1 cup blueberries
- 1 cup coconut milk
- Sweetener to taste (optional)
Instructions
- In a blender, puree the strawberries until smooth. Pour the puree into popsicle molds, filling them about 1/4 full. Freeze for 1 hour.
- Pour the orange juice into the molds over the frozen strawberry layer and freeze for another hour.
- Next, layer in the mango puree and freeze for another hour.
- Follow with the kiwi puree, freeze, and then add the blueberries.
- Finish off by pouring a layer of coconut milk on top and freeze until solid.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds.
Notes
Experiment with your favorite fruits or add herbs for unique flavors. Store in an airtight container for up to two months.
