Description

Quick and cheesy Queso Chicken Enchiladas, perfect for family dinners or casual gatherings.


Ingredients

  • 4 burrito-sized flour tortillas
  • 2 cups shredded chicken
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 can diced tomatoes with green chilies, undrained
  • 16 oz Queso Blanco Velveeta


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, taco seasoning, and sour cream in a large bowl. Mix until well combined.
  3. Place a generous scoop of the chicken filling into each tortilla, then roll them tightly and place them seam-side down in a greased baking dish.
  4. Pour the diced tomatoes and green chilies evenly over the enchiladas.
  5. Slice the Queso Blanco Velveeta, and layer it on top of the enchiladas.
  6. Bake for 25-30 minutes or until the cheese is bubbly and slightly golden.
  7. Let it cool for a few minutes before serving.

Notes

For an extra kick, top with sliced jalapeños or a dollop of guacamole.
